French Paradox refers to the potential health benefits of moderate wine consumption, because of the low risk of coronary heart diseases in France or moderate wine drinkers. This observation was associated with resveratrol, which was reported to activate Sirtuin (or Sir2) protein, a histone deacetylase implicated in anti-aging or prelonging life-span [1]. Sirtuin activation, however, has been the subject of controversy [2][3]. Even when it is true, the biological activity of less than 5 mg/l resveratrol in wine needs further study. Also, it is hard to extrapolate the yeast studies into human health.
It bounds to cyclooxygenase-1, and may exert chemopreventive activity (Biochem J DOI:10.1042/BJ20091857 See also Science 1997, 275, 218)
